When it starts to rain cats and dogs everyday ice cream season is over. At least for me. But I just have to share this recipe with you. I've made it a couple weeks ago, when it was summer outside with its terrible heat, and the only thing I could make without turning the oven was this amazing, healthy, vegan, creamy coffee ice cream. Trust me, it is the most healthiest ice cream ever! Say NO to sugar, eggs, milk and heavy cream. Say YES to frozen bananas!

On this blog I share only those recipes which have been tested and proved by me and my family. My biggest critic have always been my father. Not any piece of cake goes past his mouth. Only he always tells the truth about all my food experiments,  whatever awful this truth may be. So if the recipe was approved by my father - I can be sure this is a good one.

This ice cream wasn't an exception. My father is very conservative in food . If it is called "ice cream" - it have to be a  real ice cream made of milk, eggs, sugar. Nothing else is excepted. So I didn't even expect him to like it. However I offered him an "ice cream". Only imagine my huge surprise when  he licked the platter clean, still thinking he ate the real ice cream! More over, he asked to put it on the list of his favorite recipes!!!

I hope now you get how good this ice cream is!? Super healthy, but still ice cream. Ice cream that you can eat and don't be afraid about centimeters on your waist. Sounds like nonsense, but it is absolutely possible.  
I have been experimenting with flavors a lot, adding nutella, frozen berries, almond extract...and many other things. But coffee flavor always steels the show. Every time.

Frozen Banana Coffee Ice Cream

3 ripe bananas (peeled and frozen for at least two hours, perfect - overnight)
3 tbsp creamy peanut butter
2 tbsp coffee liqueur
2 tbsp espresso, chilled
1 tbsp ground coffee
1/4 tsp salt

optional
1/4 cup chopped chocolate
1/3 cup chopped walnuts
coffee beans (for serving)
  1. In blender or food processor bled  frozen banana pieces until smooth and creamy. Scrape down the food processor in between. You will end up with soft ice cream texture. 
  2. Add in the rest of ingredients (except chopped chocolate and walnuts) and blend until incorporated . Mix in chopped chocolate and walnuts.
  3. If you like the soft ice cream texture you can serve it immediately. For the traditional ice cream texture, transfer into container and freeze for 1-2 hours. 

Note  
After about 3 hours in a freezer the ice cream becomes very icy and solid. But it is easy to improve - just run it again through a blender before serving.
